Recipe Rehab - Low-Calorie Blondies

Traditional blondies are a delicious dessert but can put any diet on hold. Virtua Nutrition shares this low-calorie version that will satisfy the sweetest tooth.

Ingredients


  • 1/2 cup light whipped butter  
  • 3/4 cup brown sugar (not packed) 
  • 1/4 cup unsweetened applesauce 
  • 1/4 cup fat-free liquid egg substitute
  • 1 tsp. vanilla extract 
  • 1/2 cup whole-wheat flour 
  • 1/2 cup all-purpose flour 
  • 1/2 tsp. baking powder 
  • 1/4 tsp. salt 
  • 1/4 cup mini semi-sweet chocolate chips 


Directions


  • Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

  • In a large microwave-safe bowl, microwave butter for 45 seconds, or until melted. Add brown sugar, and whisk until uniform. Add applesauce, egg whites/substitute, and vanilla extract, and whisk until uniform.

  • In a medium bowl, combine all remaining ingredients except chocolate chips. Mix well. Add mixture to the large bowl, and stir until uniform. Gently stir in chocolate chips.

  • Pour mixture into the baking pan, and smooth out the top. Bake until a toothpick inserted into the center comes out clean, 26 - 28 minutes.

  • Let cool for at least 10 minutes before slicing.
